Key Job duties

  • Prepare meals in alignment with the restaurant's menu, ensuring high standards in quality, taste, and presentation.
  • Develop and maintain daily preparation plans, considering current inventory levels and anticipated ingredient requirements.
  • Maintain a clean, organized, and efficient kitchen environment, adhering to strict cleanliness and sanitation standards.
  • Execute and enforce standard operating procedures, including checklists and cleaning schedules, to uphold food safety and hygiene protocols.
  • Oversee the care, maintenance, and safe operation of all kitchen equipment, identifying and reporting necessary repairs or replacements.
  • Conduct routine procedures, such as temperature monitoring, food labeling, and inventory organization, ensuring proper storage in freezers, refrigerators, and dry areas.
  • Collaborate in menu development, portion sizing, and cost estimation to align with operational and financial goals.
  • Ensure food quality is consistently at the highest standards, adhering to Four Winds' established food quality and plating specifications.
  • Assist in the hiring and training of staff in food preparation, cooking techniques, and proper food handling to maintain a skilled and effective kitchen team.
  • Foster a positive and collaborative team environment, promoting communication and teamwork among kitchen staff.
  • Train and mentor cooks across various kitchen stations, ensuring adherence to recipes, quality standards, and operational efficiency.
  • Supervise and coordinate kitchen assistants' activities to optimize workflow and maintain productivity.
  • Manage kitchen operations, including inventory control, record-keeping, and waste reduction strategies.
  • Prepare and cook meals, including accommodating special requests or dietary needs as directed by the chef.
  • Perform other job duties as required to support the overall success of the kitchen and restaurant.

 

You must have

  • Completion of college program in cooking/food safety or Completion of a three-year apprenticeship program for cooks or 2-3 years of commercial cooking experience

 

Required Knowledge, Skills & Abilities

  • Passion for fresh ingredients and great food.
  • Excellent cooking skills with an eye for detail in food presentation.
  • Knowledge of best practices in kitchen management and food safety
  • Strong communication and interpersonal skills, both written and oral.
  • Customer service skills - exceed guest expectations.
  • Ability to multitask in a fast-paced environment.
  • Must work well within a restaurant team culture.
  • Flexibility with working hours, including availability for weekends, evenings, and holidays.
